I Say Crockpot, You Say Slow Cooker

I have a crockpot, also called slow cooker. I haven't used it a lot. One of the handles is broken.

But it still works. So when I saw pork loin on sale I decided to put the two together. The roast pork loin was about 2 1/2 pounds.

I recently bought some crock pot liners from Amazon. The crock pot lifts out of the outer heating element, but anything to save time!

I chopped some onions, carrots, celery and potatoes.

I rubbed salt, pepper and rosemary on the pork before putting it in the crock pot.

Into the crockpot it went, along with a cup of chicken broth and 1/2 cup of soy sauce.

I cooked it on low for 6 hours. When it came out, it was fork tender.

And delicious! In fact, it was so delicious I bought another roast and did it again. This time I used 1 1/4 cups chicken broth and 1/4 cup of soy sauce.

I wanted to use some of the leftover pork for a sweet and sour pork stir fry, but I didn't have enough leftover from either roast because I kept eating it with the vegetables or in sandwiches. It was so good, I couldn't seem to save any for the stir fry. I guess I'll just have to make another one.
